Premium shoyu mitsuboshi horikawaya nomura soy sauce, 500 ml
Cooking over wood fire gives this soy sauce a smoother flavor as opposed to using gas. Its development takes place through a slow fermentation in wooden barrels at room temperature and extends over at least two years, from autumn to summer, in a natural environment. This process, which spans the four seasons, is of great importance in Japan and demonstrates a deep respect for artisanal production. Only the best barrels, which produce the most perfect sauce and the most intense flavors, receive the "premium quality" label. The fermentation lasts more than two years and the quantities produced are extremely limited.
