The Japanese characters of the word "yuki", which means "organic", can also be interpreted as "time must be granted". The idea that "no life exists without time" forms the roots of Japanese organic food. At Daitoku Shoyu, they do not speed up their brewing process by adding cultured microorganisms or affecting it with heat. They preserve and never alter the traditional, natural brewing method that allows microorganisms to take up residence in the beverage and develop soy sauce in harmony with the seasons. This is based on their firm belief that genuine soy sauce is shaped by microorganisms that live in the rhythm of the regional climate. Recommendation for enjoyment: This soy sauce is excellent with sushi, sashimi, vegetables, white fish and sautéed rice.
