This shoyu is extremely rare and is distinguished by its special production. The moromi is matured in cedar barrels over a period of 10 years. The resulting sauce, obtained after squeezing the moromi through linen cloth with a mechanical press, has a thick, velvety consistency. It is only slightly acidic and rich in umami, with notes of savoury tobacco flavours and a hint of Armagnac aroma standing out with a subtle wood and humus taste.

Our recommended pairing: Try this classic 10-year-old Kamebishi soy sauce with sushi and sashimi, or as a delicious complement to strawberries with a scoop of vanilla or dark chocolate ice cream. A few drops on top add a unique flavour to these desserts.
