The Saijo persimmon is an old Japanese variety that is considered by gourmets to be the best tasting persimmon. In Japan, "Saijo" literally means "the best". Its wonderfully sweet flesh is reminiscent of the taste of honey. The Saijo persimmon tastes excellent fresh (it is best left to ripen on the tree until it is soft) and is also suitable for drying, where it keeps well.
