Red shiso is used in numerous culinary preparations as an aromatic plant. It is also considered a medicinal plant and is often used as an anti-inflammatory, antiseptic and antispasmodic. Its flavour profile is multi-faceted, combining a blend of herbs and acidity, accompanied by nuances of basil, hibiscus, acerola, cherry and lemon balm. Dried flakes allow for the production of an exceptional juice, with the tart notes providing a refreshing effect. Our recommended use: The concentrated juice adds a unique flavour to bavarois, charlottes, panna cotta, ganache, whipped cream and other sweet creations. It is also ideal for preparing delicious drinks and cocktails such as granita. On the savoury side, it can be used for marinades (meat, fish), mayonnaise and reduced juices.
