In Gunma, central Japan, our artisan Shin Shin has developed a technique to produce fermented cucumbers and vegetables. This method makes it possible to preserve the sensory properties of the vegetables over a long period of time by controlling the microorganisms. Fukujinzuke consists of seven types of vegetables, including radish, eggplant, cucumber, lotus root, ginger, red beans and aromatic plants such as shiso and sesame. All ingredients are refined with a mixture of salt, sugar, soy sauce, vinegar and spices.
