Dashi refers to a variety of broths that can be prepared by steeping various ingredients in cold or lukewarm water. The most popular type of dashi is made with kombu seaweed. Other well-known flavors are achieved by using dried bonito flakes (Katsuobushi), dried sardines, and dried shiitake mushrooms.

In terms of usage, it is ideal for enhancing risottos, sauces, poached broths, meat, vegetable, or fish tartares, omelets, and more. Diluted at a ratio of 1 part dashi to 5 parts water, it can also be used for cooking rice or vegetables. This vegetarian broth contains no additives, colorants, or preservatives.
