The characters of the Japanese word "yuki", which means "organic", can also be interpreted as "time must be given". The basic idea behind organic food in Japan is based on the conviction that "life does not exist without time". At Daitoku Shoyu, the brewing process is not shortened, neither by adding cultured microorganisms nor by heating. They always stick to the traditional production and natural brewing method, which allows the microorganisms to settle in the product and develop soy sauce according to the seasons. This belief is based on the idea that authentic soy sauce is shaped by microorganisms that work in harmony with the regional climate and their own natural life cycle.
Recommended use: This soy sauce goes perfectly with sushi, sashimi, vegetables, white fish and sautéed rice.
