Tosazu is a high-quality and aromatic seasoning made from rice vinegar, soy sauce, mirin and strong dashi stock. This dashi broth is refined with katsuobushi, dried bonito.
The name “Tosazu” comes from Tosa, the old name of Kôchi Prefecture. In Kôchi, eating bonito smoked with rice straw is a popular delicacy.
