Vegetables harvested in winter are known for their richness in free amino acids (for vegetables, 547 mg/100g, a high concentration of alanine, glutamate, sparganine, serine, glutamine, etc.) and their sweet taste.

The onions harvested in winter are called “Yuki-Shita Negi,” which means “Japanese leeks under the snow.”
